Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat.
  4. Add Italian seasoning, salt, pepper, and marinara sauce to the beef mixture, stirring well.
  5. Spoon the beef mixture into the hollowed-out zucchinis.
  6. Top with shredded cheese.
  7. Place the zucchini boats in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  9. Serve hot.
