- 4 medium zucchinis
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat.
- Add Italian seasoning, salt, pepper, and marinara sauce to the beef mixture, stirring well.
- Spoon the beef mixture into the hollowed-out zucchinis.
- Top with shredded cheese.
- Place the zucchini boats in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
- Serve hot.
Notes
For a lighter option, substitute ground beef with ground turkey or chicken. For a vegetarian version, use black beans or lentils.
