Description

A delicious twist on classic chicken parmesan using ground chicken for a lighter and quick dish perfect for any night.


Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup panko breadcrumbs
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 teaspoon salt, divided in half
  • 4 cloves garlic, roughly chopped
  • 2 pounds ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 770 mL marinara sauce (1 jar Rao’s)
  • 1 cup grated parmesan
  • 2 sprigs basil
  • to 2 cups shredded mozzarella cheese

Instructions

  1. In a skillet, melt the butter over medium heat. Add the panko breadcrumbs, ¼ teaspoon of salt, garlic powder, onion powder, and Italian seasoning. Toast the breadcrumbs, stirring frequently, until golden brown. Set aside.
  2. In the same skillet, heat the oil and sauté diced onion until soft, about 3-4 minutes. Add chopped garlic and cook for another minute.
  3. In a large bowl, combine ground chicken, half of the salt, garlic powder, onion powder, and oregano. Mix well. Add the cooked onion and garlic mixture and combine thoroughly.
  4. Preheat your oven to 375°F (190°C). Spread the ground chicken mixture into a baking dish, pressing it down evenly. Pour marinara sauce over the top. Sprinkle grated parmesan and top with toasted breadcrumbs.
  5. Add shredded mozzarella cheese on top. Bake for 25-30 minutes or until the cheese is bubbly and golden. Garnish with fresh basil before serving.

Notes

Serve hot with spaghetti, garlic bread, or a fresh salad. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
