A delicious twist on classic chicken parmesan using ground chicken for a lighter and quick dish perfect for any night.

- 1 tablespoon unsalted butter
- 1 cup panko breadcrumbs
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon Italian seasoning
- 1 tablespoon oil
- 1 small onion, diced
- 1 teaspoon salt, divided in half
- 4 cloves garlic, roughly chopped
- 2 pounds ground chicken
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 770 mL marinara sauce (1 jar Rao’s)
- 1 cup grated parmesan
- 2 sprigs basil
- 1½ to 2 cups shredded mozzarella cheese
Instructions
- In a skillet, melt the butter over medium heat. Add the panko breadcrumbs, ¼ teaspoon of salt, garlic powder, onion powder, and Italian seasoning. Toast the breadcrumbs, stirring frequently, until golden brown. Set aside.
- In the same skillet, heat the oil and sauté diced onion until soft, about 3-4 minutes. Add chopped garlic and cook for another minute.
- In a large bowl, combine ground chicken, half of the salt, garlic powder, onion powder, and oregano. Mix well. Add the cooked onion and garlic mixture and combine thoroughly.
- Preheat your oven to 375°F (190°C). Spread the ground chicken mixture into a baking dish, pressing it down evenly. Pour marinara sauce over the top. Sprinkle grated parmesan and top with toasted breadcrumbs.
- Add shredded mozzarella cheese on top. Bake for 25-30 minutes or until the cheese is bubbly and golden. Garnish with fresh basil before serving.
Notes
Serve hot with spaghetti, garlic bread, or a fresh salad. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
