Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups pineapple chunks
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Mix soy sauce, brown sugar, olive oil, garlic powder, salt, and pepper in a bowl. Marinade the chicken in this mixture for at least 30 minutes.
  2. Cook the rice according to package instructions, substituting coconut milk for water.
  3. Preheat the grill or pan on medium-high heat. Grill the chicken for about 6-7 minutes on each side until fully cooked.
  4. Grill the pineapple chunks until caramelized, about 2-3 minutes.
  5. Serve the chicken over coconut rice and top with grilled pineapple. Garnish with chopped green onions.

Notes

For more flavor, marinate the chicken overnight. Fresh pineapple gives a juicier flavor, and you can add crushed red pepper flakes for some heat.
