Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1 cup whole wheat bread crumbs
  • ½ cup grated Parmesan cheese
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Butterfly and pound chicken breasts to about ¼ inch thickness.
  3. Set up three bowls: one with flour, one with whisked eggs, and one with mixed breadcrumbs, Parmesan cheese, and seasonings.
  4. Coat each chicken cutlet in flour, dip into the egg mixture, then cover with the breadcrumb blend.
  5. Place breaded chicken on the baking sheet and bake for a total of 30 minutes (15 minutes per side).
  6. Top each cutlet with marinara sauce and mozzarella, then broil for an additional 2 minutes until cheese melts.
  7. Serve over pasta or salad as desired.

Notes

For extra flavor, marinate the chicken in Italian seasoning before breading. Use cooking spray or a light drizzle of olive oil for a crispier texture.
