- 1 lb chicken breast, diced
- 2 medium sweet potatoes, cubed
- 1 cup rice (brown or white)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: avocado, spinach, or your favorite sauce
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cubed sweet potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25-30 minutes or until tender.
- Cook the rice according to package instructions.
- Heat a little olive oil in a skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes.
- Assemble the rice bowls by layering cooked rice, roasted sweet potatoes, and chicken. Add optional toppings as desired.
Notes
For meal prep, cool leftovers to room temperature and store in an airtight container in the fridge for up to 3 days. Use brown rice for more fiber or add spices like paprika and garlic powder for extra flavor.
