- 1 cup protein powder
- 1/2 cup cocoa powder
- 1/4 cup almond flour
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with liners.
- Mix the protein powder, cocoa powder, almond flour, baking powder, and salt in a large bowl together.
- Combine the honey (or maple syrup), applesauce, and vanilla extract in another bowl until well blended.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the dark chocolate chips if using.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
- Let them cool before removing from the tin.
Notes
Use a high-quality protein powder for the best flavor and texture. You can also swap dark chocolate chips for white chocolate or butterscotch chips for a different flavor!
