Homemade Chicken Pot Pie is pure comfort food, warm and hearty, perfect for family dinners.

- 2 cups cooked chicken, shredded
- 1 cup peas and carrots (frozen or fresh)
- 1 cup diced potatoes
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large saucepan, melt butter over medium heat. Add onion and celery, and sauté until softened.
- Stir in flour, salt, pepper, and thyme until well combined. Gradually add chicken broth and milk, stirring constantly until thickened.
- Add chicken, peas, carrots, and potatoes to the mixture. Stir to combine, then remove from heat.
- Pour the chicken mixture into a pie crust in a pie dish. Cover with the top crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes, or until the crust is golden brown.
- Let cool for a few minutes before serving.
Notes
Serve warm with a side salad or bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
