Homemade Chicken Pot Pie is pure comfort food, warm and hearty, perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup peas and carrots (frozen or fresh)
  • 1 cup diced potatoes
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large saucepan, melt butter over medium heat. Add onion and celery, and sauté until softened.
  3. Stir in flour, salt, pepper, and thyme until well combined. Gradually add chicken broth and milk, stirring constantly until thickened.
  4. Add chicken, peas, carrots, and potatoes to the mixture. Stir to combine, then remove from heat.
  5. Pour the chicken mixture into a pie crust in a pie dish. Cover with the top crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
  6. Bake for 30-35 minutes, or until the crust is golden brown.
  7. Let cool for a few minutes before serving.

Notes

Serve warm with a side salad or bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
