  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk (dairy or dairy-free)
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or canned peaches, diced
  • 1 teaspoon ground cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.
  2. Mix together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon in a large bowl.
  3. Whisk together the milk, melted butter, eggs, and vanilla extract in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix.
  5. Fold in the diced peaches gently.
  6. Spoon the batter evenly into the muffin tin, filling each cup about three-quarters full.
  7. Sprinkle brown sugar on top of each muffin for added sweetness.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use ripe, juicy peaches for the best flavor. If using canned peaches, make sure to drain well. Don’t overmix to keep muffins light and fluffy. Feel free to add nuts or oats for extra texture.
