Ingredients

  • 1 large head green cabbage (about 34 pounds)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 2 tablespoons olive oil
  • To taste: salt
  • To taste: pepper
  • Optional toppings: crumbled feta cheese or toasted nuts

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove any outer leaves from the cabbage and rinse it under cool water.
  3. Slice the cabbage into 1-inch thick steaks. You should get about 4-6 steaks from one head.
  4. In a small bowl, mix the balsamic vinegar, honey (or maple syrup), olive oil, salt, and pepper.
  5. Place the cabbage steaks on a baking sheet lined with parchment paper.
  6. Brush the mixture generously over both sides of each steak.
  7. Roast in the oven for 25-30 minutes, flipping them halfway through, until they are tender and a little caramelized.
  8. Remove from the oven and let them cool slightly. If desired, sprinkle with optional toppings before serving.

Notes

Choose a fresh head of cabbage for the best flavor. You can store leftovers in an airtight container for up to 3 days.
