- 1 large head green cabbage (about 3–4 pounds)
- 1/4 cup balsamic vinegar
- 2 tablespoons honey (or maple syrup for a vegan option)
- 2 tablespoons olive oil
- To taste: salt
- To taste: pepper
- Optional toppings: crumbled feta cheese or toasted nuts
Instructions
- Preheat your oven to 400°F (200°C).
- Remove any outer leaves from the cabbage and rinse it under cool water.
- Slice the cabbage into 1-inch thick steaks. You should get about 4-6 steaks from one head.
- In a small bowl, mix the balsamic vinegar, honey (or maple syrup), olive oil, salt, and pepper.
- Place the cabbage steaks on a baking sheet lined with parchment paper.
- Brush the mixture generously over both sides of each steak.
- Roast in the oven for 25-30 minutes, flipping them halfway through, until they are tender and a little caramelized.
- Remove from the oven and let them cool slightly. If desired, sprinkle with optional toppings before serving.
Notes
Choose a fresh head of cabbage for the best flavor. You can store leftovers in an airtight container for up to 3 days.
