Ingredients

  • 2 large sweet potatoes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper in a bowl.
  4. Arrange the sweet potatoes in a single layer on a baking sheet.
  5. Roast in the oven for about 25-30 minutes or until tender and golden, flipping halfway through.
  6. Remove from the oven and drizzle honey over the sweet potatoes.
  7. Sprinkle crumbled feta cheese on top.
  8. Garnish with fresh herbs and serve warm.
