Ingredients

- 2 large sweet potatoes
- 1/2 cup feta cheese, crumbled
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a bowl.
- Arrange the sweet potatoes in a single layer on a baking sheet.
- Roast in the oven for about 25-30 minutes or until tender and golden, flipping halfway through.
- Remove from the oven and drizzle honey over the sweet potatoes.
- Sprinkle crumbled feta cheese on top.
- Garnish with fresh herbs and serve warm.
Notes
Serve warm on a platter or individual plates. Store leftovers in an airtight container in the fridge for 3-4 days.
