A quick and satisfying meal featuring tender chicken, sweet potatoes, and green beans in a delicious honey garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until well combined.
  2. Marinate the chicken in this mixture for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet. Drizzle them with olive oil and season with salt and pepper.
  5. Toss the sweet potatoes to coat evenly and roast for about 15 minutes.
  6. Remove the baking sheet from the oven and push the sweet potatoes to one side. Place the marinated chicken on the other side and arrange the green beans around them.
  7. Drizzle the remaining marinade over the chicken and vegetables.
  8. Bake for 20-25 minutes until the chicken reaches 165°F (74°C) and the sweet potatoes are tender.

Notes

For extra flavor, marinate the chicken overnight. Check chicken temperature with a meat thermometer to ensure it is fully cooked.
