- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Whisk together the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until well combined.
- Marinate the chicken in this mixture for at least 30 minutes or up to 8 hours in the refrigerator.
- Preheat your oven to 400°F (200°C).
- Spread the cubed sweet potatoes on a lined baking sheet. Drizzle them with olive oil and season with salt and pepper.
- Toss the sweet potatoes to coat evenly and roast for about 15 minutes.
- Remove the baking sheet from the oven and push the sweet potatoes to one side. Place the marinated chicken on the other side and arrange the green beans around them.
- Drizzle the remaining marinade over the chicken and vegetables.
- Bake for 20-25 minutes until the chicken reaches 165°F (74°C) and the sweet potatoes are tender.
Notes
For extra flavor, marinate the chicken overnight. Check chicken temperature with a meat thermometer to ensure it is fully cooked.
