- 1 lb carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt to taste
- Pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the carrots, olive oil, honey, salt, and pepper.
- Toss until the carrots are evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh herbs if desired. Serve warm.
Notes
For a sweet variation, try adding a squeeze of lemon juice or a sprinkle of cinnamon before roasting.
