- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced fresh mango
- 1/2 cup oats
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a bowl.
- Beat together the softened butter, brown sugar, and granulated sugar until creamy in another bowl.
- Add the egg and vanilla extract; mix until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix well.
- Fold in the diced mango, oats, and shredded coconut.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden.
- Let cool before serving.
Notes
For best flavor, use ripe mango. These cookies can be frozen for longer storage.
