A tender crumb cake bursting with juicy peaches, perfect for summer gatherings or enjoying on a sunny afternoon.

- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup canned peaches, drained and chopped
- 1/2 cup powdered sugar
- 2–3 tablespoons peach juice (from canned peaches)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8 or 9-inch round cake pan and line the bottom with parchment paper.
- Sift together the flour, baking powder, baking soda, and salt in a medium mixing bowl. Whisk them together to mix well.
- Beat the softened butter and granulated sugar in a large bowl with a hand mixer or stand mixer until the mixture is pale and fluffy, about 2-3 minutes.
- Add the eggs one at a time, ensuring that each egg is fully mixed in before adding the next. Add the vanilla extract and mix until smooth.
- Fold the sour cream into the batter until it is well combined.
- Gradually add the dry ingredients to the wet mixture in two parts with the mixer on low speed. Mix just until there are no streaks of flour.
- Carefully fold the drained and chopped peaches into the batter using a spatula.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 10-15 minutes. Then run a knife around the edges and invert the cake onto a cooling rack. Allow it to cool completely.
- Whisk together powdered sugar and peach juice until it’s smooth and pourable. Drizzle this glaze over the cooled cake.
Notes
Serve at room temperature, optionally topped with whipped cream or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to 3 days.
