Description
A healthy and flavorful Jamaican side dish featuring sautéed cabbage, onions, and thyme, perfect with jerk chicken or grilled fish.
Ingredients

- 1 head of cabbage, chopped
- 1 onion, sliced
- 2–3 sprigs of fresh thyme
- 1 Scotch bonnet pepper, chopped (optional for spice)
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions and sauté until they are translucent.
- Add the chopped Scotch bonnet pepper and thyme, cooking for an additional minute.
- Stir in the chopped cabbage and season with salt and pepper.
- Cover the skillet and let the cabbage cook down for about 10-15 minutes, stirring occasionally, until tender.
- Serve warm as a side dish with rice, jerk chicken, or grilled fish.
Notes
For added flavor, sauté garlic with the onions. Adjust the amount of Scotch bonnet pepper to control spice levels.
