Description

A healthy and flavorful Jamaican side dish featuring sautéed cabbage, onions, and thyme, perfect with jerk chicken or grilled fish.


Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, sliced
  • 23 sprigs of fresh thyme
  • 1 Scotch bonnet pepper, chopped (optional for spice)
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and sauté until they are translucent.
  3. Add the chopped Scotch bonnet pepper and thyme, cooking for an additional minute.
  4. Stir in the chopped cabbage and season with salt and pepper.
  5. Cover the skillet and let the cabbage cook down for about 10-15 minutes, stirring occasionally, until tender.
  6. Serve warm as a side dish with rice, jerk chicken, or grilled fish.

Notes

For added flavor, sauté garlic with the onions. Adjust the amount of Scotch bonnet pepper to control spice levels.
