Description

These creamy, cheesy chicken enchiladas are a crowd-pleaser, perfect for family meals and gatherings.


Ingredients

  • 3 cups Cooked shredded chicken
  • 8 medium Flour tortillas
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Sour cream
  • 1 can (4 oz) Green chilies, drained
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the cooked shredded chicken, onion powder, garlic powder, salt, and black pepper in a large bowl.
  3. Fill tortillas with the chicken filling, roll them up, and place seam-side down in a greased baking dish.
  4. Melt the butter in a saucepan over medium heat and stir in the flour, cooking for about a minute.
  5. Whisk in the chicken broth gradually, cooking until the mixture thickens.
  6. Stir in the sour cream and green chilies until well combined.
  7. Pour the creamy sauce over the rolled tortillas, covering them completely.
  8. Sprinkle the Monterey Jack and cheddar cheese over the sauce.
  9. Bake for about 25 minutes or until the cheese is bubbly and golden brown.

Notes

Serve hot with fresh cilantro, diced tomatoes, or sour cream. Pairs well with rice or a salad.
