Description

A fun and delicious dish combining fresh veggies, creamy dressing, and a hint of lime that’s perfect for gatherings.


Ingredients

  • 8 oz pasta (your choice)
  • 2 cups fresh corn (cooked or grilled)
  • 1 bell pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, bell pepper, cherry tomatoes, red onion, cilantro, and feta cheese.
  3. In a small bowl, whisk together the mayonnaise, lime juice, salt, and pepper.
  4. Pour the dressing over the salad and toss until everything is well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
