- 8 oz pasta (your choice)
- 2 cups fresh corn (cooked or grilled)
- 1 bell pepper (diced)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup feta cheese (crumbled)
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, corn, bell pepper, cherry tomatoes, red onion, cilantro, and feta cheese.
- In a small bowl, whisk together the mayonnaise, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
