Delightful cookies combining the tangy taste of lemon, sweet blueberry jam, and creamy cheesecake goodness.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup blueberry jam
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the butter, cream cheese, and sugar until smooth.
  3. Beat in the egg and vanilla extract, followed by the lemon zest.
  4. Mix flour, baking soda, and salt in another bowl. Gradually add this to the wet mixture.
  5. Fold in the blueberry jam until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cool on the sheet for a few minutes before transferring to a wire rack.

Notes

For a variation, substitute blueberry jam with raspberry or strawberry jam. You can also add chopped nuts for extra crunch.
