  • 4 fillets salmon (6 oz each)
  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • 1/2 cup unsalted butter (1 stick)
  • 2 lemons (1 for juice, 1 for slices)
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C). If you like, line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Potatoes: Wash, peel (if preferred), and cut the potatoes into small cubes. Toss them in a large bowl with olive oil, salt, black pepper, and paprika until well coated.
  3. Roast the Potatoes: Spread the seasoned potatoes on one side of the baking sheet in a single layer. Bake for 25 minutes, stirring halfway through until they’re golden brown and crispy.
  4. Make the Lemon Butter Sauce: While the potatoes roast, melt the butter in a medium saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the juice of one lemon, and season with salt and pepper to taste.
  5. Add Salmon and Broccoli: After 15 minutes of roasting the potatoes, push them to one side of the baking sheet and add the salmon fillets in the cleared space. Spoon the lemon butter mixture over the salmon and place lemon slices on top. Arrange the broccoli florets on the same baking sheet, drizzle with olive oil, and season with salt and pepper.
  6. Final Roasting: Return the baking sheet to the oven and roast everything together for an additional 15-20 minutes or until the salmon is cooked through and the broccoli is tender.
  7. Serve: Once done, remove from the oven and let rest for a couple of minutes. Garnish with fresh parsley if desired, and enjoy your meal!

Notes

Storing leftovers: Allow the salmon and vegetables to cool, then place them in an airtight container. They can be stored in the refrigerator for up to 3 days.
