  • 1 package instant lemon pudding mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 4 large eggs
  • Zest of 1 lemon
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large mixing bowl, combine the yellow cake mix, lemon pudding mix, water, vegetable oil, eggs, and lemon zest. Mix until well combined.
  3. Pour the batter into the prepared cake pan.
  4. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. In a small bowl, mix the powdered sugar and fresh lemon juice to create the glaze.
