Description

Delightful Lemon Crumb Muffins that bring a refreshing twist to traditional muffins with a sweet crumb topping.


Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Combine the melted butter, egg, milk, lemon zest, and lemon juice in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Combine the brown sugar, oats, and cinnamon in a separate small bowl.
  6. Fill each muffin cup about halfway with batter, sprinkle with the crumb mixture, and then top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
