Description

Ingredients

  • 8 oz bowtie pasta
  • 1 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (optional)

Instructions

  1. Cook the bowtie pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced zucchini and cook for about 3-4 minutes, until tender.
  5. Mix in the cooked pasta, lemon juice, and lemon zest. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley and grated Parmesan cheese if desired.

Notes

For extra flavor, consider adding red pepper flakes or cooked chicken/shrimp. Store leftovers in an airtight container for 2-3 days.
