- 8 oz bowtie pasta
- 1 medium zucchini, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Parmesan cheese, grated (optional)
Instructions
- Cook the bowtie pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini and cook for about 3-4 minutes, until tender.
- Mix in the cooked pasta, lemon juice, and lemon zest. Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley and grated Parmesan cheese if desired.
Notes
For extra flavor, consider adding red pepper flakes or cooked chicken/shrimp. Store leftovers in an airtight container for 2-3 days.
