Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 8 ounces sirloin steak, cut into bite-sized pieces
  • 1 tablespoon butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Thoroughly wash and scrub the russet potatoes under running water.
  3. Dry the potatoes with a clean kitchen towel.
  4. Poke each potato several times with a fork to allow steam to escape while baking.
  5. Rub the potatoes with olive oil, salt, black pepper, garlic powder, and paprika, ensuring they are evenly coated.
  6. Place the seasoned potatoes directly on the oven rack and bake for about 50-60 minutes or until they are fork-tender.
  7. While the potatoes bake, season the sirloin steak pieces with salt and black pepper.
  8. Heat butter in a skillet over medium-high heat.
  9. Add the seasoned steak bites and sear for about 3-4 minutes on each side for medium-rare doneness.
  10. Once the potatoes are cooked, carefully remove them from the oven.
  11. Slice each potato lengthwise and slightly mash the insides with a fork.
  12. Top each loaded potato with the cooked steak bites.
  13. Sprinkle shredded cheddar cheese generously over the steak and potatoes.
  14. Return the loaded potatoes to the oven for 3-5 minutes or until the cheese is melted and bubbly.
  15. Remove the loaded baked potatoes from the oven and garnish with chopped green onions.

Notes

Make sure to poke the potatoes well so they bake evenly. Use a meat thermometer for perfectly cooked steak; it should reach 135°F (57°C) for medium-rare.
