Description

A delicious and cheesy dish combining Parmesan and mozzarella for a crispy outside and juicy inside.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix bread crumbs, half of the grated Parmesan, Italian seasoning, salt, and black pepper.
  3. In a second bowl, beat the eggs and milk together.
  4. Place flour in a third bowl.
  5. Dredge each chicken breast in flour, dip in the egg mixture, then coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and cook coated chicken breasts for 3–4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish.
  8. Mix remaining Parmesan, mozzarella, and garlic, and sprinkle over the chicken.
  9. Bake for 20–25 minutes or until the internal temperature reaches 165°F (74°C).
  10. Let sit for a few minutes before serving.

Notes

Pound the chicken breasts to an even thickness for consistent cooking. For a lighter version, bake the chicken without frying it first.
