Ingredients

- 1 head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 2 cans diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, garlic, carrots, and celery until softened.
- Add chopped cabbage and bell pepper, and cook for a few more minutes.
- Pour in vegetable broth and diced tomatoes.
- Stir in thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, until vegetables are tender.
- Serve warm.
Notes
Garnish with fresh herbs or sprinkle cheese on top. Pair with whole-grain bread for a filling meal.
