Description

A delicious and healthy cabbage soup that’s low in calories but high in flavor, perfect for weight loss.


Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 2 cans diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, garlic, carrots, and celery until softened.
  2. Add chopped cabbage and bell pepper, and cook for a few more minutes.
  3. Pour in vegetable broth and diced tomatoes.
  4. Stir in thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, until vegetables are tender.
  6. Serve warm.

Notes

Garnish with fresh herbs or sprinkle cheese on top. Pair with whole-grain bread for a filling meal.
