Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh mango puree
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix crushed graham crackers and melted butter until combined.
  3. Press this mixture into the bottom of mini cheesecake cups to form the crust.
  4. Beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  5. Stir in the mango puree until it is well incorporated.
  6. Whip the heavy cream and powdered sugar until stiff peaks form.
  7. Fold the whipped cream into the mango cream cheese mixture until combined.
  8. Spoon the mango mixture on top of the crusts in the mini cheesecake cups.
  9. Bake for 20 minutes or until set.
  10. Chill in the refrigerator for at least 240 minutes before serving.

Notes

For best results, use fresh mango puree and ensure the cream cheese is softened to room temperature.
