- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup whole milk
- Zest of 2 lemons
- 1/3 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the eggs and sugar until pale and thickened. Add the oil, milk, lemon zest, lemon juice, and vanilla extract and stir until combined.
- Sift the flour, baking powder, and salt into the bowl. Gently fold the dry ingredients into the wet mixture until just smooth.
- Pour the batter into the prepared pan, smooth the top, and bake for 28–32 minutes, or until lightly golden and a toothpick comes out clean.
- Cool completely in the pan, then dust with powdered sugar if desired, and cut into squares.
- Serve warm or chilled, with berries or whipped cream if desired.
Notes
For best results, use room temperature eggs and finely grated lemon zest. You can add poppy seeds for a twist.
