Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Season the chicken breasts with salt and pepper and add them to the skillet. Cook for 5-7 minutes on each side until golden brown.
  4. Drizzle balsamic vinegar over the chicken and reduce the heat.
  5. Add the cherry tomatoes and cook for an additional 5 minutes.
  6. Sprinkle mozzarella cheese on top and transfer the skillet to the preheated oven.
  7. Bake for 15 minutes or until the chicken is cooked through and the cheese is melted.
  8. Garnish with fresh basil before serving.

Notes

For extra flavor, consider adding spinach or bell peppers. Use a meat thermometer to check that the chicken is cooked through, reading 165°F (75°C) in the center.
