- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper and add them to the skillet. Cook for 5-7 minutes on each side until golden brown.
- Drizzle balsamic vinegar over the chicken and reduce the heat.
- Add the cherry tomatoes and cook for an additional 5 minutes.
- Sprinkle mozzarella cheese on top and transfer the skillet to the preheated oven.
- Bake for 15 minutes or until the chicken is cooked through and the cheese is melted.
- Garnish with fresh basil before serving.
Notes
For extra flavor, consider adding spinach or bell peppers. Use a meat thermometer to check that the chicken is cooked through, reading 165°F (75°C) in the center.
