Ingredients

  • 1 lb chicken breasts
  • 1 cup pesto sauce
  • 1 package (9 oz) tortellini
  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts in a large baking dish and coat them with pesto sauce.
  3. Add the tortellini and drizzle with olive oil.
  4. Arrange the asparagus and cherry tomatoes around the chicken and tortellini.
  5. Season with salt and pepper.
  6. Bake for 20-25 minutes until the chicken is cooked through and the tortellini is tender.
  7. Serve with grated Parmesan cheese if desired.

Notes

Use room temperature chicken for even cooking. Trim asparagus to similar lengths. Adjust pesto thickness with olive oil if needed.
