- 2 boneless, skinless chicken breasts
- 8 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then sear them in the pot until golden brown on both sides, about 5-7 minutes. Remove from the pot and set aside.
- Add minced garlic to the pot and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and add penne pasta, stir to combine, and bring to a boil.
- Reduce heat to a simmer, cover, and cook for about 10 minutes, or until the pasta is tender.
- Stir in heavy cream and parmesan cheese until well combined. Return the chicken to the pot and let everything simmer for an additional 2-3 minutes.
- Garnish with parsley and serve warm.
Notes
For extra flavor, consider adding vegetables like spinach or peas. Adjust garlic according to your taste.
