  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine grated Parmesan cheese, salt, and pepper in a shallow dish.
  3. Dip each chicken breast into the cheese mixture, coating thoroughly.
  4. Arrange halved baby potatoes and green beans on a large baking sheet lined with parchment paper. Drizzle with olive oil, minced garlic, salt, and pepper. Toss to coat evenly.
  5. Place the Parmesan-coated chicken on the baking sheet among the vegetables.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and crispy.
