Description

Delightful dessert bars combining fresh peaches with a crumbly, buttery topping.


Ingredients

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Mix in the softened butter until crumbly.
  3. Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, toss the sliced peaches with lemon juice and vanilla extract. Spread the peach mixture over the crust.
  5. Sprinkle the remaining crumb mixture over the peaches, covering them evenly.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Allow to cool before cutting into bars. Serve plain, with icing, or alongside ice cream.

Notes

For extra crunch, consider adding chopped nuts or adjusting sugar based on peach sweetness.
