Delightful dessert bars combining fresh peaches with a crumbly, buttery topping.

- 2 cups fresh peaches, peeled and sliced
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a large bowl, combine flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Mix in the softened butter until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, toss the sliced peaches with lemon juice and vanilla extract. Spread the peach mixture over the crust.
- Sprinkle the remaining crumb mixture over the peaches, covering them evenly.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars. Serve plain, with icing, or alongside ice cream.
Notes
For extra crunch, consider adding chopped nuts or adjusting sugar based on peach sweetness.
