Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 2 cups cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups peaches (canned or fresh, sliced)
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the graham cracker crumbs, 1/2 cup sugar, and melted butter until combined. Press into the bottom of a springform pan to form the crust.
  3. Beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust you prepared earlier.
  5. Layer the sliced peaches on top of the cream cheese mixture.
  6. Combine the brown sugar, flour, oats, and cinnamon in a separate bowl. Cut in the butter until crumbly. Sprinkle the topping over the peaches.
  7. Bake for 45-50 minutes until the cheesecake is set.
  8. Allow the cheesecake to cool completely, then chill it in the refrigerator before serving.

Serve chilled with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
