- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup melted butter
- 2 cups cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups peaches (canned or fresh, sliced)
- 1 cup sour cream
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup oats
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the graham cracker crumbs, 1/2 cup sugar, and melted butter until combined. Press into the bottom of a springform pan to form the crust.
- Beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust you prepared earlier.
- Layer the sliced peaches on top of the cream cheese mixture.
- Combine the brown sugar, flour, oats, and cinnamon in a separate bowl. Cut in the butter until crumbly. Sprinkle the topping over the peaches.
- Bake for 45-50 minutes until the cheesecake is set.
- Allow the cheesecake to cool completely, then chill it in the refrigerator before serving.
Notes
Serve chilled with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
