- 1 cup pineapple chunks (fresh or canned)
- 1 cup jasmine or basmati rice
- 2 cups chicken broth
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Stir in garlic and ginger, cooking until fragrant.
- Add the soy sauce, pineapple chunks, and chicken broth. Bring to a simmer.
- Stir in the rice and cover to cook according to rice package instructions, usually about 15 minutes.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, season with salt and pepper, and garnish with green onions if desired. Serve warm.
