  • 2 cups chicken broth

  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned, about 5-7 minutes.
  3. Stir in garlic and ginger, cooking until fragrant.
  4. Add the soy sauce, pineapple chunks, and chicken broth. Bring to a simmer.
  5. Stir in the rice and cover to cook according to rice package instructions, usually about 15 minutes.
  6. Remove from heat and let it sit covered for an additional 5 minutes.
  7. Fluff the rice with a fork, season with salt and pepper, and garnish with green onions if desired. Serve warm.
