- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract (optional)
- 2 cups all-purpose flour (or gluten-free blend)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 can canned pineapple rings (well-drained)
- 2 tablespoons additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract (if using) to the bowl. Mix until well combined.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
- Line a baking sheet with parchment paper.
- Place a pineapple ring on each spot where you want a cookie.
- Spoon cookie dough into the center of each pineapple ring.
- Sprinkle a little sugar on top of each cookie before baking.
- Bake in the preheated oven for about 12-15 minutes or until the edges are golden.
- Allow them to cool on the baking sheet for a few minutes, then transfer to a wire rack.

Store in an airtight container for up to a week. Freeze for 2-3 months and thaw at room temperature prior to enjoying.
