Description

A comforting and delicious enchilada dish made with ground beef, zesty spices, and melted cheese wrapped in soft tortillas.


Ingredients

  • 1 pound ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (10 oz) red enchilada sauce
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef and chopped onion in a skillet over medium heat until browned and the onion is soft.
  3. Add minced garlic, chili powder, cumin, and salt. Cook for another minute.
  4. Pour in diced tomatoes and red enchilada sauce, then mix and let it simmer for a few minutes.
  5. Take a tortilla, spoon the beef mixture down the center, sprinkle cheese, and roll up tightly. Repeat for all tortillas.
  6. Place the rolled tortillas in a greased baking dish, pour any leftover sauce over the top, and sprinkle remaining cheese.
  7. Bake for about 20-25 minutes until the cheese is bubbly and golden.
  8. Remove from the oven, garnish with fresh cilantro if desired, and serve hot.

Notes

For extra flavor, serve with sour cream, guacamole, or salsa. Leftovers can be stored in the refrigerator for up to 3-4 days.
