Ingredients

  • 500 grams ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 cup tomato sauce
  • 1 cup black beans, drained
  • 1 cup corn
  • 2 cups tortilla chips, crushed
  • 2 cups cheddar cheese, shredded
  • ½ cup sour cream
  • 2 tablespoons green onions, chopped

Instructions

  1. Cook the ground beef in a large skillet over medium heat until browned. Drain excess fat.
  2. Add the chopped onion and minced garlic; cook until the onion is soft.
  3. Add the taco seasoning and tomato sauce, mixing well. Let it simmer for a few minutes.
  4. Preheat your oven to 180°C (350°F) and grease a baking dish.
  5. Spread half of the crushed tortilla chips in the bottom of the dish. Pour half of the beef mixture over the chips, then add half of the black beans, corn, and cheddar cheese. Repeat the layers with remaining ingredients.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes, until cheese is bubbly.
  7. Allow the casserole to cool slightly. Top with sour cream and green onions before serving.

Notes

For extra flavor, consider adding diced tomatoes with green chilies. Use spicy taco seasoning or add jalapeños for heat. Customize with ground turkey or chicken for lighter options or make it vegetarian by adding extra beans or vegetables.
