  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped apples
  • 1/4 cup cinnamon sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cream of tartar, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the chopped apples.
  6. Scoop spoonfuls of dough and roll into balls, then roll each ball in cinnamon sugar.
  7. Place the sugar-coated dough balls onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a chewier cookie, avoid overbaking. They should look slightly underdone when you take them out.
