Description

A simple and delicious breakfast casserole featuring bread and fresh blueberries, perfect for busy mornings and special occasions.


Ingredients

  • 1 loaf of bread (brioche or challah recommended)
  • 1 cup fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter for greasing the dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with butter.
  3. Slice the loaf of bread into cubes and place half in the baking dish.
  4. Sprinkle fresh blueberries over the first layer of bread cubes.
  5. Add the remaining bread cubes on top of the blueberries.
  6. In a mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt.
  7. Pour the egg mixture over the bread and blueberries.
  8. Let the casserole sit for about 15 minutes to soak up the mixture.
  9. Bake in the preheated oven for 30-35 minutes until golden and set.
  10. Allow to cool slightly before serving.
