- 2 cups Cucumbers (English cucumbers preferred)
- 8 oz Imitation Crab or Crab Meat (or cooked shrimp/tofu)
- 1 medium Avocado (cubed just before serving)
- 2 tbsp Mayonnaise (light mayo for a healthier option)
- 2 oz Cream Cheese (or Greek yogurt)
- 2 tbsp Soy Sauce (low-sodium if preferred)
- 1 tbsp Sesame Seeds (optional garnish)
Instructions
- Wash and dry the cucumber. Slice thin or chop into small bite-size pieces.
- Break the imitation crab or crab meat into small pieces and put in a bowl.
- Add the cucumber to the bowl with crab.
- Cube the avocado right before mixing and add it to the bowl.
- Mix mayonnaise, cream cheese, and soy sauce in a small dish until smooth.
- Pour the dressing over the salad and toss gently to coat everything.
- Sprinkle sesame seeds on top for a light crunch.
- Taste and add more soy sauce if desired.

Store in an airtight container in the fridge and consume within 1 day for best texture.
