Description

A quick and fresh salad that combines crunchy cucumber, soft avocado, and tasty crab without the need for rolling. Perfect for a light lunch or a side dish.


Ingredients

  • 2 cups Cucumbers (English cucumbers preferred)
  • 8 oz Imitation Crab or Crab Meat (or cooked shrimp/tofu)
  • 1 medium Avocado (cubed just before serving)
  • 2 tbsp Mayonnaise (light mayo for a healthier option)
  • 2 oz Cream Cheese (or Greek yogurt)
  • 2 tbsp Soy Sauce (low-sodium if preferred)
  • 1 tbsp Sesame Seeds (optional garnish)

Instructions

  1. Wash and dry the cucumber. Slice thin or chop into small bite-size pieces.
  2. Break the imitation crab or crab meat into small pieces and put in a bowl.
  3. Add the cucumber to the bowl with crab.
  4. Cube the avocado right before mixing and add it to the bowl.
  5. Mix mayonnaise, cream cheese, and soy sauce in a small dish until smooth.
  6. Pour the dressing over the salad and toss gently to coat everything.
  7. Sprinkle sesame seeds on top for a light crunch.
  8. Taste and add more soy sauce if desired.

Notes

Store in an airtight container in the fridge and consume within 1 day for best texture.
