Recreate the spicy, smoky flavors of restaurant-style roast chicken at home with this easy Chipotle Copycat recipe.

- 3 pounds boneless skinless chicken thighs (or boneless skinless chicken breasts sliced in half lengthwise)
- 2 tsp olive oil
- 4–5 tbsp water (optional for pan frying)
- 1 can chipotle peppers in adobo sauce (7 oz)
- 4 tbsp fresh lime juice
- 4 tbsp fresh orange juice
- 1/2 cup fresh cilantro
- 6 garlic cloves
- 1 medium onion (quartered)
- 1 tsp cumin
- 1 tbsp dried oregano
- 1 tsp ground coriander (optional)
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Combine the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper in a blender and blend until smooth.
- Place the chicken in a large bowl or resealable bag, pour the marinade over, and coat evenly. Let it marinate in the refrigerator for at least 30 minutes, or up to overnight.
- Preheat your grill over medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked.
- Heat olive oil in a large skillet over medium heat (add water if using). Cook the marinated chicken for about 5-6 minutes on each side, or until cooked through.
- Preheat your air fryer to 380°F. Arrange marinated chicken in the basket and air fry for about 18-20 minutes, flipping halfway through.
Notes
For extra flavor, let the chicken marinate overnight. Don’t skip the resting period after cooking; it helps keep the chicken juicy.
