Slow Cooker Chicken Fajitas

Description

A delicious and easy one-pot meal featuring tender chicken, colorful bell peppers, and onions, perfect for busy weeknights.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)
  • Fajita Seasoning:
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt (or more)
  • 1 1/2 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Season the chicken with salt and pepper.
  2. Add the chicken and all the other ingredients to the slow cooker.
  3. Stir to mix well.
  4. Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  5. For the Instant Pot, add the chicken broth and follow the standard pressure cooking instructions.

Notes

For extra flavor, marinate the chicken in the fajita seasoning and diced tomatoes for a few hours before cooking. Adjust the amount of vegetables to your liking.
