Ingredients

  • 4 chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro for garnish)

Instructions

  1. Combine the chicken, rice, chicken broth, lemon zest, lemon juice, garlic, onion, thyme, oregano, salt, and pepper in the slow cooker.
  2. Stir to combine all the ingredients.
  3. Cover and cook on low for 360-420 minutes or on high for 180-240 minutes until chicken is cooked through and rice is tender.
  4. Shred the chicken with two forks and stir back into the rice.
  5. Serve warm, garnished with fresh herbs.

Notes

Marinate chicken in lemon juice and garlic before cooking for extra flavor. You can add vegetables like carrots or peas for a heartier dish.
