- 1 cup (220g) Packed Light Brown Sugar
- ½ cup (100g) Granulated Sugar
- 1 cup (250g) Creamy Peanut Butter
- 2 large Eggs, room temperature
- 2 teaspoons Vanilla Extract
- 2 ½ cups (300g) All-Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ½ teaspoon Salt
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
- Add the creamy peanut butter and mix until fully combined, then beat in the eggs one at a time, followed by the vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, mixing at low speed until combined.
- Use a medium cookie scoop to form uniform dough balls, place them 2 inches apart on the prepared sheets.
- Flatten each ball slightly with a fork to create a criss-cross pattern.
- Bake in the oven for 10-12 minutes until lightly golden around the edges but still soft in the center.
- Remove from the oven and let rest on the baking sheet for 5-7 minutes before transferring to a wire rack to cool completely.
