Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the strawberry jam.
  7. In a separate bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  8. Scoop a tablespoon of cookie dough, flatten it slightly, place a teaspoon of cheesecake filling in the center, and cover with more dough.
  9. Bake for 10-12 minutes until the edges are golden.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For the best results, make sure all your ingredients are at room temperature. You can substitute the strawberry jam with raspberry or blueberry for a fun twist.
