Quick and easy strawberry pie bites that feature a cream cheese filling and fresh strawberries, perfect for parties or a simple snack.
Ingredients

- 1 cup fresh strawberries, chopped
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 pre-made pie crust
- Whipped cream (optional) for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Roll out the pie crust and cut it into small circles to fit into a muffin tin.
- Press the circles into the muffin tin and bake for about 10 minutes or until lightly golden. Allow to cool.
- Combine softened cream cheese, powdered sugar, and vanilla extract in a mixing bowl until smooth.
- Spoon the cream cheese mixture into each baked pie crust.
- Top each with chopped strawberries.
- Add a dollop of whipped cream on top, if desired.
- Serve chilled and enjoy your strawberry pie bites!
Notes
Chill before serving so the filling sets well. Keep in the fridge for up to 2–3 days.
