  • 1 pie crust (store-bought or homemade)
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine strawberries, rhubarb, sugar, flour, vanilla extract, cinnamon, and lemon juice in a large bowl.
  3. Pour the fruit mixture into the pie crust.
  4. Mix oats, brown sugar, and softened butter in another bowl until crumbly.
  5. Sprinkle the streusel topping over the fruit.
  6. Bake for about 45-50 minutes or until bubbly and golden brown.
  7. Let cool before serving.
