- 2 cups strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 pie crust (store-bought or homemade)
- 1/2 cup oats
- 1/2 cup brown sugar
- 1/4 cup butter, softened
Instructions
- Preheat your oven to 425°F (220°C).
- Combine strawberries, rhubarb, sugar, flour, vanilla extract, cinnamon, and lemon juice in a large bowl.
- Pour the fruit mixture into the pie crust.
- Mix oats, brown sugar, and softened butter in another bowl until crumbly.
- Sprinkle the streusel topping over the fruit.
- Bake for about 45-50 minutes or until bubbly and golden brown.
- Let cool before serving.
Notes
Serve warm or at room temperature. Top with whipped cream or vanilla ice cream if desired.
