Refreshing and creamy strawberry shortcake ice cream bars, perfect for summer treats.
Ingredients

- 2 cups fresh strawberries, hulled and chopped
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups vanilla ice cream, softened
- 1 cup whipped cream
- 1 package graham crackers (about 8 full sheets)
- ½ cup butter, melted
Instructions
- Prepare the Strawberries: In a medium bowl, mix the chopped strawberries with the granulated sugar. Let them sit for about 10-15 minutes until they release their juices.
- Make the Crust: Crush the graham crackers into fine crumbs. In a separate bowl, mix the crumbs with melted butter until combined. Press this mixture firmly into the bottom of a rectangular pan (or any mold you prefer) to form the crust.
- Mix Ice Cream and Whipped Cream: In a large bowl, combine softened vanilla ice cream, whipped cream, and vanilla extract. Stir until smooth and fluffy.
- Layer the Ingredients: Spread half of the ice cream mixture over the graham cracker crust. Drizzle half of the strawberry mixture over the ice cream layer, then top with the remaining ice cream mixture. Finally, spread the rest of the strawberry mixture on top.
- Freeze: Cover the pan and place it in the freezer for at least 240-360 minutes or until firm.
- Slice and Serve: Once set, remove from the freezer and let it sit for a few minutes. Cut into bars and serve cold.
Notes
Store leftover bars in the freezer in an airtight container for up to two weeks.
