- 2 cups of fresh corn (cooked and cooled)
- 1 large cucumber, diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 1 tsp chili powder
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Combine the cooked corn and diced cucumber in a large bowl.
- Whisk together the mayonnaise, sour cream, lime juice, chili powder, and season with salt and pepper in a separate bowl.
- Pour the dressing over the corn and cucumber mixture and toss to combine.
- Stir in the chopped cilantro.
- Chill in the refrigerator for at least 30 minutes before serving.
