Description

A delightful and refreshing side dish combining sweet corn and crunchy cucumber in a creamy, tangy dressing.


Ingredients

  • 2 cups of fresh corn (cooked and cooled)
  • 1 large cucumber, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Combine the cooked corn and diced cucumber in a large bowl.
  2. Whisk together the mayonnaise, sour cream, lime juice, chili powder, and season with salt and pepper in a separate bowl.
  3. Pour the dressing over the corn and cucumber mixture and toss to combine.
  4. Stir in the chopped cilantro.
  5. Chill in the refrigerator for at least 30 minutes before serving.
