Description

A refreshing salad combining sweet corn, crunchy cucumber, and a creamy yogurt dressing, perfect for summer gatherings.


Ingredients

  • 2 ears of corn
  • 1 large cucumber
  • 1/4 cup red onion
  • 1/4 cup fresh cilantro
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper

Instructions

  1. Grill the corn over medium-high heat for about 10-12 minutes until slightly charred.
  2. Cool and remove kernels using a sharp knife; place in a mixing bowl.
  3. Add diced cucumber, chopped red onion, and cilantro to the bowl.
  4. In another bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the corn mixture and toss until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator. Best eaten within 2-3 days.
