Ingredients

- 2 ears of corn
- 1 large cucumber
- 1/4 cup red onion
- 1/4 cup fresh cilantro
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper
Instructions
- Grill the corn over medium-high heat for about 10-12 minutes until slightly charred.
- Cool and remove kernels using a sharp knife; place in a mixing bowl.
- Add diced cucumber, chopped red onion, and cilantro to the bowl.
- In another bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the corn mixture and toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator. Best eaten within 2-3 days.
